They are entrusted with a collection that is highly precise and almost scientific. The right degree of ripeness is reached when the olives have a light color in the pulp and are partially colored on the surface. We select these olives because they are the best.

As soon as they are harvested, their health is checked before being transported to the oil mill for processing. Then they are transported to you. First, all the leaves are removed, then the olives are washed and crushed into a paste. Last but not least, it is mixed under a controlled temperature with special blades that allow the release of tiny drops of oil through the breaking of vacuoles. As a result, a surface film forms spontaneously.

The oil is obtained from the paste and the vegetative water using a centrifuge technique that produces extra virgin olive oil on one side and pomace, or the solid part of the paste, on the other side, from which olive pomace oil will be recovered later.
